Dublin Coddle
Ingredients:
6-8 Potatoes, peeled & sliced
2-3 Onions, sliced
1 Lb Sausage links
1/2 Lb Bacon slices
2 Tbs Teeny Tiny Spice blend of choice (Suggestions below)
1 Pint water
Large handful of chopped parsley or scallions
Suggested blends: Shepherd Herb Mix, Perfection Spice Rub, Montréal Seasoning, Jamaican Jerk
Instructions:
Toss the potatoes and onions with the spice and put them in a heavy bottomed, deep pan.
Place the bacon strips and sausage on top of the potatoes and onions.
Pour the pint of water over all, cover and bring to a very gentle simmer.
Cook for 2-3 hours.
Serve hot with chopped parsley or scallions and a beer or whiskey.
