Roasted Okra
Ingredients:
1 Lb Okra
¼ C Olive oil
1 ½ tsp Teeny Tiny Spice blend of choice
¼ tsp Salt
(Suggested blends, Jamaican Jerk, Cajun Spice, Harissa, Seaside Spice
Instructions:
Preheat oven to 350ªF.
Cut tops off of the okra and slice each one in half.
Place the okra, olive oil, spices and salt into a medium bowl and toss well until the okra is well coated.
Place the okra in a single layer on a baking sheet.
Bake for 40 minutes or until okra is golden brown and soft.
Remove from oven, adjust seasoning and serve warm with aoli or mayo, pesto or by itself.
