Homemade Cream Cheese
Ingredients:
4 C Whole milk
3-4 Tb Lemon or lime juice
Teeny Tiny Spice blend of choice to taste (Suggestions below)
Salt to taste
(Suggested Teeny Tiny Spice blends: Shepherd Herb Mix, WhoopAss, Harissa, British Curry
Instructions:
Pour the milk into a pot and heat over medium heat until it just starts to bubble, stirring occasionally.
Remove from heat and stir in lemon or lime juice, one tablespoon at a time to coagulate the curds.
Allow it to sit for 15-30 minutes.
Pour into a sieve/colander lined with cheese cloth or a tea towel and allow to drain for several hours until the curds are fairly dry.
Process in a food processor until smooth. Add a bit of milk or cream as needed if too dry.
Season with Teeny Tiny Spices and salt to taste.
